Easy + delicious homemade mini vegan pizzas

When Ciao Gusto reached out and asked if I wanted to feature one of their products in a recipe blog post, I couldn’t resist.  I absolutely love sundried tomatoes and they have a new organic version which is right up my street!  I’m always touting the many benefits of choosing organic for our health and the planet.

I absolutely love sundried tomatoes as part of a salad, or even on their own in an Italian restaurant as part of an antipasti, but my favourite way to enjoy them is chopped up as a pizza topping!

Sundried tomatoes really bring an extra depth to the tomato taste of a pizza with their potent, tangy and rich taste.

With a five year old and eight year old at home, pizza is always a winner.  In fact, it’s a winner for us adults alone!

I knew instantly I wanted to make some homemade pizzas with homemade dough, however it had been a while since I made pizza dough from scratch and I didn’t have any yeast!

Luckily, I found a no yeast pizza dough recipe online and adapted it slightly for the ingredients I had available.

My no yeast pizza dough recipe

  • 350g gluten-free rice flour
  • 220ml distilled water
  • 2 ¾ tsp baking powder
  • 2 twists pink Himalayan salt
  • 1.5 tbsp organic sunflower oil

As well as not having any yeast to hand (bad prepping on my part), I also didn’t have regular flour.  I’d usually use organic wholemeal flour, but I only had a gluten-free rice flour, so I used this.  I’m one for using up the ingredients I have to hand, before buying something new!

It was actually really tasty with the rice flour, and had the added benefit of being gluten-free.  It’s not great for making large pizza bases, but perfect for mini pizzas.

The rice flour seems more absorbent than normal flour and needed a little extra water and oil compared to the BBC Good Food recipe.

Himalayan salt looks pretty with its pink colour and it contains more minerals than white salt.

I always distill my drinking water at home using a Megahome distiller each day, hence why I used distilled water in this recipe.  Of course tap water or whatever water you usually use is fine.  Here’s a detailed look at why I drink distilled water if you’re curious.

Of course, this dough recipe can easily be adapted for whatever ingredients you have already at home or prefer to use.

My no yeast pizza dough method

Making the pizza dough is really simple!  I’m all for easy cooking and methods.  Who has time to be slaving away in the kitchen for hours?

Simply preheat your oven by turning it on before you even collect your ingredients together, and it should be warm enough by the time your dough is ready.

Add all the ingredients to a large mixing bowl and mix well.

I found it much easier to mix together with my hands and knead in the bowl itself.  The rice flour creates a lovely ball of soft dough really quickly.

Separate into small chunks and flatten into mini pizza doughs, ready for their toppings.  I made smaller pizza bases for the kids and slightly larger ones for me and my husband!

Delicious mini vegan pizza recipe with sundried tomatoes + fresh basil

Now for the toppings – the best part!

You can, of course, use whatever pizza toppings you so desire, but I do recommend exactly what I tried.

They were so tasty and very Italian with the fresh basil and rich tomato flavours.

  • Pizza dough (as above)
  • tomato puree
  • chopped tomatoes
  • grated vegan cheese
  • sliced white onion
  • sliced + quartered courgette
  • sliced white onion
  • fresh basil
  • Ponti Organic Sundried Tomatoes – chopped

For the pizza sauce I used a mixture of tinned chopped tomatoes and tomato puree, spread generously over the fresh pizza dough.

I added chopped courgette, onion, vegan cheese and the star of the show – Ponti Organic Sundried Tomatoes.

These baked for 15 minutes in the pre-heated oven.

After cooking, I added torn fresh basil and served with a drizzle of balsamic vinegar.

The kids love tomato puree as a dip or vegan mayo.
