1. Quorn pieces stir fry
Vegan quorn pieces, beansprouts, mushrooms, carrot, red pepper, tiny tin of coconut milk, fresh garlic, powder garlic, onion granules, ginger, cinnamon, paprika, turmeric, black pepper and chilli flakes – all mixed together and cooked in a wok.
Served with wholegrain rice.
2. Vegan macaroni
Wholewheat macaroni in vegan cheese sauce made from vegan cheese powder, rice flour, oat milk and grated vegan cheese. Steamed chopped mushrooms and steamed finely chopped courgette is mixed into the sauce and pasta.
Served with steamed baby carrots and a sprinkle of black pepper.
3. Wholesome green slop!
Spinach, leek, courgette, green lentils, chickpeas, vegetable stock, mixed herbs, onion granules, garlic, pepper, balsamic vinegar and apple cider vinegar. One pot! Easy!

Heated for 7 minutes in oven.

Served with a dash of apple cider vinegar and blob of vegan mayo.
16. Soy bolognese
Soy bolognese & wholemeal spaghetti.
Served with a homemade, wholemeal garlic pitta bread and sprinkle of vegan cheese (Violife).
Our ‘bolognese’ was made from finely chopped courgette & mushrooms, soy mince, chopped tomatoes, tomato purée, balsamic vinegar, coconut aminos (like soy sauce, but made with coconuts), black pepper, crushed garlic clove, onion granules – all stirred and cooked in a big wok for approx 12 minutes whilst the wholemeal spaghetti cooks.
17. Beetroot & balsamic salad
Green salad leaves, sweetcorn, radish, grated carrot, red pepper, raw courgette, sliced beetroot & generous dash of balsamic vinegar.
18. Vegan roast dinner
Roast potatoes, roast parsnips, carrots, tender stem broccoli, peas and stuffing balls.
Served with a Jamaican vegetable patty (from Ocado). Can be served with whatever you like though!
Condiments: onion gravy, a sprinkle of dried mint and dash of apple cider vinegar.
19. Spicy vegan fajita wrap
Courgette, mushroom and red pepper all chopped small. Two cloves garlic finely chopped. Stir fry in wok with dash of oil until tender.
Add 1x teaspoon sesame seeds. 2 tablespoons tomato purée. Sprinkle of paprika, ginger, turmeric, crushed chillies and onion granules. Dash of water.
Mix into wok mixture until covered and heated.
Optional: I cooked a breaded jackfruit burger in the oven and cut into strips to add to my wrap filling.
Served in a warmed wholemeal wrap with a sprinkle of grated vegan cheese, vegan mayo and shredded green salad leaves.

Sugar-free beans on wholemeal pitta, plum tomatoes, grilled mushrooms, grilled courgette, dash of apple cider vinegar & black pepper.

Homemade tikka with wholegrain rice and pitta garlic bread!
Curry recipe: Rehydrated soy chunks (boil for 5 minutes before adding to wok), chickpeas, mushrooms, red pepper, kale, garlic, 1/2 jar Pataks curry paste, tin of coconut milk and chilli flakes.
All stirred and cooked in a wok whilst wholegrain rice cooks for 25 minutes until soft.
