Vegan food diary: everything I ate for two weeks

Here’s a look at everything I have eaten as a vegan for 14 days! Hopefully you’ll find some easy vegan food recipe inspiration and healthy eating ideas.

I maintain a healthy weight and BMI of 19 through healthy eating and I usually go to the gym several times a week, but this has stopped whilst I’m at home with my kids in the coronavirus lockdown.  However,  I’m still able to control my weight. We do go for a couple of longish walks a couple of times a week and shorter walks almost every day.

Here’s a look at all my vegan food, drinks, snacks, the lot, for two entire weeks in a vegan food diary.

LUNCH: Large homemade cacao, protein powder, frozen banana & Koko coconut milk drink milkshake 🍌🥤

DINNER: Vegan roast dinner: roast potatoes cooked in mixed herbs & onion granules, sweet potato, Ocado vegan escalopes, stuffing balls, baby carrots, courgette & pak choi 🥔🥕🥒🍠🥬

BREAKFAST: 2x mugs weak ground coffee with hazelnut milk ☕️🌰

LUNCH: BOL coconut, corn and sweet potato soup. Small tin sweetcorn. 🥥🌽🍠🥣

DINNER: ✨TREAT DAY✨ sweet potato waffles and normal waffles, avocado, vegan sausages, beans, vegan cheese, yellow mustard, vegan mayo & apple cider vinegar 🧇🍠🌭🧀🥑

BREAKFAST: 2x mugs weak ground coffee with hazelnut milk ☕️🌰

LUNCH: Red lentil & pepper soup. Rye Ryvita x2 with PURE spread, marmite & Violife slice 🍅🌶🧀

DINNER: Vegan curry & ‘naan’ 🥕🧅🧄🍚

I really fancied a naan bread, but the local shop only had milk containing naan, so we used a white pitta (🙈) and added freshly chopped garlic, garlic powder & vegan cheese!

I served my curry on top of the ‘naan’ and with wholegrain rice.

Curry: rehydrated soy chunks, mushroom, carrot, onion, sweetcorn, coconut milk & Pataks mild curry paste 🍄🌽

BREAKFAST: 2x mugs weak ground coffee with hazelnut milk ☕️🌰

LUNCH: Warm curry wrap 😋

Yesterday’s curry reheated with some green lentils and chopped tomatoes added. Served with vegan mayo, avocado, lettuce, cucumber, tomato and vegan cheese in a wholemeal wrap. 🍅🥬🥒

Curry: rehydrated soy chunks, mushroom, carrot, onion, sweetcorn, coconut milk & Pataks mild curry paste 🍄🌽

DINNER: Topped flatbread 🍕

Wholemeal flatbread (Crosta & Mollica) with tomato purée, aubergine, soy pieces, tomato, sweetcorn, mushroom, vegan cheese, chilli flakes & black pepper 🌶🍆🍅🌽🧀

Served with green salad leaves & houmous 🥬
