Easy vegan meal inspiration – my plant based food diary

Keeping a vegan food diary is a great way to show others what I eat every day. It’s also handy for inspiration if you want to make easy plant based meals at home.

Here are my vegan lunches and dinners for the past week or so.  I hope you discover some easy vegan meal inspiration!

1. Lentil bolognese

Wholegrain spaghetti with lentil bolognese: chopped tomatoes, green lentils, mushrooms, fresh garlic, red pepper, yellow pepper, sweetcorn, red kidney beans, chilli flakes, mixed herbs, ACV…

2. Organico risotto

Organico risotto – mixed with water only – added mushrooms & black pepper.

3. Picnic plate

Sweetcorn, yellow pepper, carrot, apricots, cucumber, Ryvita with 100% peanut butter.

4. Squash curry

Ambercup squash (I think… looks like a mini pumpkin), spinach, spring onion, broccoli, sesame seeds, soy chunks with coconut milk & Pataks tikka paste. Served with whole grain rice.

5. Vegan roast dinner

Roasties, stuffing, mixed veg & Linda McCartney pea protein sausages.

6. Chilli and chips

I used leftover bolognese mix from a couple of days ago to make a chilli. The bolognese had chopped tomatoes, green lentils, mushrooms, fresh garlic, red pepper, yellow pepper, sweetcorn, red kidney beans, chilli flakes, mixed herbs, ACV.

I added rehydrated soy mince, mushrooms, spring onions, chopped tomatoes & chilli powder and reheated in a wok.

Served with a mix of homemade wedges and Strong Roots vegetable root fries.

7. Soy, ginger & garlic stir fry

Rehydrated soy pieces, yellow pepper, spring onion, mushrooms, spinach, fresh garlic, dried ginger, onion granules, soy sauce, chilli flakes, dash of water. Served with germinated brown rice, sesame seeds & sunflower seeds.

8. Picnic plate with leftover stuffing

Wondering what to do with leftover stuffing? It’s really delicious cold as part of a picnic!

9. Cooked breakfast

‘Fish’ goujons, vegan sausage, wholemeal toast, mushrooms, beans, plum tomatoes

10. Pizza & salad

Crosta & Mollica ready to top base with vegan cheese, onion, mushroom, sweetcorn, tomato slices. Side salad of lettuce, radish & cherry tomatoes & houmous.

11. BBQ burger

Linda McCartney quarter pounder, vegan cheese, lettuce, tomato, vegan mayo, mustard. Seeded wholemeal bun. Served with salad and raspberries.

12. One-pot pesto pasta

Wholemeal pasta with onion, fresh garlic, tomato, tender stem broccoli, mushrooms, green pesto & sunflower seeds.

13. Bhaji salad

Onion bhaji, vegan sausage & houmous salad. Salad leaves, radish, onion, grilled mushrooms, apple cider vinegar.

14. Vegetable burger salad

Vegetable burger with salad: lettuce, sweetcorn, tender-stem broccoli, onion, beetroot, ACV, houmous

15. Leftover curry

Leftover curry! Rehydrated soy pieces, ambercup squash, sweetcorn, pak choi, onion, coconut milk, Pataks tikka sauce & wholegrain rice. Served with a side of sweet potato wedges 🍠

Always great to batch cook things like curry so you can save some for easy future meals!

16. Curry pitta pockets

Another great way to use leftover curry!

Wholegrain pitta pockets filled with curry, vegan cheese & lettuce.

Curry: Rehydrated soy pieces, ambercup squash, sweetcorn, pak choi, onion, coconut milk, Pataks tikka parts & wholegrain rice.

Yum!

17. Picnic plate #2

So easy to make with any dry and raw food you have. Super healthy too with raw veg.

2 flat peaches, raw courgette, carrot & cucumber, apple, quinoa cracker with 100% peanut butter
